Dr. Poon was called to bring all people to worship during her university years. Afterwards, she pursued studies in theology and church music and later embarked on missionary work in Germany. Her postgraduate journey in Inter-cultural Studies took her into the realms of Ethnodoxology—a pioneering field that merges missiology, worship studies, and cultural arts, which fuelled her PhD research in the US.

Dr. Poon has dedicated herself to pastoral care and educational roles in churches and seminaries, tirelessly promoting "Biblically faithful, culturally appropriate, and life-transforming" holistic missions. Her work enriches worship ministries through the arts and trains missionaries and worship artisans to embrace cultural diversity. Recently, she has pioneered courses in Ethnodoxology and "Bible-based Art and Trauma Healing" in Hong Kong, advocating and demonstrating multicultural inclusive worship, and translated teaching textbooks such as "Community Arts for God's Purposes." Dr. Poon is committed to inspiring Chinese churches to revitalize their creative and imaginative spirit, weaving the values of the Kingdom into their worship and missionary endeavors. Beyond her academic interests, she enjoys choral singing, Chinese calligraphy, and creating art with her daughter.
